Getting that deep, golden-brown crust on a loaf of bread isn’t just about cranking up the heat. It’s all about timing. See, in a steam oven, the dough gets soaked. If you’re just relying on the air circulating around (convection), that moisture hangs around too long. You end up with a crust that feels soggy or looks patchy. To fix that, you need a sudden, intense blast of heat to flash-dry the surface and trigger the browning process in a matter of seconds.
