In a professional steam oven, the line between a gorgeous, golden-brown crust and a burnt mess is incredibly thin. Sometimes it’s just a single degree. That’s why we use far-infrared (FIR) heating elements. Think of it as the bridge between the humid steam and that perfect surface sear. Instead of just blowing hot air around like a convection oven, FIR goes straight into the dough. It kicks off the Maillard reaction—that magic browning process—way faster, all while keeping the inside of the bread soft and moist. Getting the heat right We design these elements to pack a lot of punch in a small space. When you flip the switch on a high-wattage FIR tube, you want it to react now. If there’s a lag between the thermostat clicking and the element hitting its peak, you get “temperature overshoot.” It’s a pain. Your controller starts hunting for the right temperature, and suddenly your loaves are coming out in different shades of brown. We spend a lot of time calibrating the surface load so the heat spreads evenly. No hot spots, no surprises. The gear inside Most of our elements are wrapped in high-purity quartz. Why? Because standard glass just can’t handle the shock of a steam-filled oven. It would crack. We also add specific coatings to push the energy into that far-infrared range. This means the heat is absorbed by the water molecules in your dough, rather than just warming up the air in the oven. And since commercial kitchens are loud, vibrating, and damp, we pair everything with heavy-duty connectors. They’re built to survive the chaos. The trade-offs Now, FIR isn’t some magic wand. It puts a lot of pressure on your PID controllers. If your sensors are in the wrong spot or your wiring is too thin, you’ll get voltage drops that kill your precision. You also can’t use old-school mechanical contactors here—they’re too slow and they’ll burn out from all the constant switching. You need a fast-acting SSR (Solid State Relay) to keep things steady. It takes a bit more effort to set up, but when you pull a perfect tray of bread out of that oven? It’s worth it.
