
The Secret to That Perfect Crust: Why We Use Infrared Circular Tubes
Most convection ovens just push hot air around. It works, but it’s slow. If you’re serious about baking, you want heat that hits the dough the second it goes in. That’s where infrared (IR) comes in. Instead of waiting for the air to warm up, IR radiation jumps straight to the surface. We design our heating tubes in a circle to wrap around the baking chamber. Why? Because nobody likes a cold spot in their oven.
Why the physics actually matter
Think of it this way: traditional coils heat the air, and the air heats the bread. IR skips the middleman. These waves penetrate the crust almost instantly, giving you that massive “oven spring” where the bread just leaps upward before the structure locks in. To make this happen, we use high-purity quartz. It’s clear, so the IR rays can get out without any interference.
The nitty-gritty (and where things can go wrong)
We use halogen-filled quartz envelopes. It lets us crank up the power density without frying the filament. Plus, the circular shape gives us more surface area, meaning the heat is spread evenly across the whole oven. But here is the thing: you have to be careful with the wiring. If you’re hooking these up in a big array, make sure your contactors can handle that initial surge of power. Also, remember that quartz is brittle. Ovens expand and shift when they get hot. If the frame squeezes the tube, it’ll crack. We use floating mounts to give the tubes some room to breathe. It saves you a lot of headaches later.
Putting it all together
When you use these tubes, you get way more control. You can blast the top elements to get that deep, dark, caramelized crust while keeping the bottom heat steady so the inside stays perfect. It cuts your bake time down significantly. Just a heads-up: this heat is intense. If your PID controller isn’t dialed in, you can overshoot your temp and burn everything. My advice? Put a fast-response thermocouple within 50mm of the tube. It’s the best way to make sure you don’t scorch your hard work.
