
Keeping Your Steam Ovens from Burning Out
Let’s be honest: commercial bread ovens are brutal. Between the constant steam blasts and the temperature swinging up and down, it’s a nightmare environment for hardware. When you’re looking for a replacement infrared lamp, the heat output is only half the battle. The real fight is keeping that element from snapping the second it hits a cloud of moisture. The power struggle We build these lamps to hit the wattage industrial bakers actually need. You want that instant radiant energy to get a perfect, golden-brown crust. But there’s a catch. When you cram high wattage into a short tube, things get incredibly hot. If your wiring is old or your controllers are struggling, you’ll get voltage drops. That’s how you end up with loaves that are burnt on one side and pale on the other. Not a great look. Dealing with the steam Water and hot quartz don’t get along. If a stray droplet hits a searing hot tube, it can cause a “thermal shock” that cracks the glass instantly. To stop that from happening, we use high-purity quartz. We also fill them with halogen gas. It sounds technical, but here’s what it actually does: it pushes evaporated tungsten back onto the filament. It keeps the wire thick and strong so the lamp doesn’t burn out in a few weeks. Getting them in (and keeping them alive) We use standard connectors like R7s or SK15 because nobody has time for a complicated install. You want to swap the lamp and get back to baking. But watch your vents. If your cooling fans are shot or the vents are clogged, the heat has nowhere to go. It just soaks back into the sockets and melts your wiring. That’s a headache you don’t want. And one last tip:don’t touch the glass. Seriously. Even a tiny bit of oil from your fingertips creates a hot spot on the quartz. Once that happens, the tube will snap. Use a clean cloth, pop it in, and you’re good to go. You get a fast ramp-up and total control over your top-heat—just keep the lamps clean and the air flowing.
