But you can’t just grab a random lamp off a shelf and hope it works. We customize the wattage and voltage to fit your specific oven. More wattage per centimeter means more heat hitting the bread, which speeds everything up. Just be careful. Too much power and you’ll char the outside before the middle is even cooked. That’s why we use PID controllers to pulse the power—it keeps the heat steady so nothing burns.
The Gear Under the Hood
